Winter Country Soup

Ingredients

    8 oz smoked sausage
    1 Tablespoon butter, unsalted
    1 cup chopped shallots
    1 large red bell pepper, choppen and seeded
    8 cups chopped fresh turnip greens (or any greens)
    1 can (15.25 oz) whole kernel yellow corn, drained
    1 can (15.5 oz) great northern beans, drained
    8 cups chicken broth or vegetable broth or stock
    1/2 teaspoon cayenne pepper
    1/4 cup uncooked orzo pasta

Directions

Cut sausage into 1/4 inch slices. Melt butter and cook sausage, shallots and red bell pepper, stirring occasionally until sausage is lightly browned, about 3-4 minutes. Add turnip greens and cook, stirring oocasionally until greens wilt, about 3 minutes. Stir in corn, beans, broth and cayenne pepper. Bring to a boil and add orzo pasta. Return to a boil, reduce heat to medium-low, cover and cook for about 30 minutes.
