From The Armenian Kitchen Blog (a great site!). The traditional way is to soak the beans overnight, then cook the following day until tender to have truly flavorful beans. Number of Servings: 8

Ingredients

    2 carrots, diced
    2 to 3 stalks celery, diced
    2 medium potatoes, diced
    1 clove garlic, minced
    1 (6-oz) can tomato paste
    dash of salt
    2 (15-oz) cans white beans, drained and rinsed
    2 Tbsp. olive oil
    1 onion, sliced
    2 cups of water

Directions

1. Blend the tomato paste with about 2 cups of water and add the carrots, celery, potatoes and garlic. Cook until vegetables are tender, about 15 minutes.
2. Add the beans and cook about 15-20 minutes more. Remove from stove.
3. In a skillet, saute the onion until golden brown. Gently add to cooked plaki.
4. Serve warm or chilled, with lemon juice or lemon wedges.
