Orzo with Chickpeas

Submitted by: ROBSMANDY

Introduction

From Rachael Ray's 30 Minute Meals. She listed this as 4 servings, which would work as a main dish with a salad, but I made it 8 servings as a side dish. Mint is not included in the nutrition information. From Rachael Ray's 30 Minute Meals. • I love chickpeas so this appealed to me right away. My teen son turned his nose up at it at first but tasted it now loves it too. Same with my husband. I didn't have mint or fresh herbs on hand so I used Italian seasoning. It worked out great but I'm sure fresh is better. A go-to lunch staple for us - 7/27/10
