Salmon pie

Introduction

Number of Servings: 6

Ingredients

    15 oz can Salmon drained(save liquid in 1 cup measure)
    1 cup soft bread crumbs
    3 eggs lightly beaten
    1 cup chopped celery
    1/4 cup chopped onion
    2 TBSP butter or oil
    2 TBSP chopped fresh parsley or 2 tsp dried parsley
    1/4 tsp salt
    1 TBSP lemon juice
    1 unbaked 9" pie shell

Directions

Preheat oven to 400. Saute butter, onions & celery until celery is tender. Set aside to cool. Put pie crust into 9" pie plate. Combine saved liquid with milk to total 1 cup. Bone,skin and flake salmon. Combine liquid, salmon, bread crumbs,lemon juice,salt, parsley and eggs. MIX WELL. After saute is cooled combine with salmon mixture and pour into unbaked pie shell. Bake for 40 minutes or until pie is set. Let sit for 10 minutes before serving
