Thai-Style Scallops

Ingredients

    8 oz uncooked vermicelli
    1/2 lb bay scallops
    1/2 tsp salt
    1/2 tsp pepper
    1/2 cup Thi chili sauce, divided
    1 cup shredded carrots
    1 cup bean sprouts
    1/4 cup chopped salted & roasted peanuts
    1 tbsp chopped fresh basil

Directions

Serves 4
1. Coat grill basket or grill rack with nonstick cooking spray. Preheat grill to medium-high. Cook pasta according to package directions; drain. Lightly coat pasta with cooking spray to avoid sticking.

2. Meanwhile, sprinkle scallops evenly with salt and pepper; brush evenly with 1/4 cup Thai chili sauce. Lightly coat scallops with nonstick cooking spray.

3. Grill scallops in grill basket or on grill rack 2 -- 4 minutes on each side or until opaque.

4. Place hot pasta on serving platter. Top with scallops; strinkle evenly with carrots, bean sprouts, peanuts and basil. Serve with remaining chili sauce.
