1 lb boneless, skinless chicken breast cut up into bite size pieces
1 tsp chopped/minced garlic
1 26 oz jar of spaghetti sauce
1 c fresh broccoli, cut up
1/2 c fresh cauliflower, cut up
1/2 c fresh green pepper, cut into strips
1 med. mushroon, sliced
5 baby carrots, sliced
1 c Zucchini cut up
1 Tbsp Extra Virgin Olive Oil
1/2 Tbsp of dried basil
2. Saute vegetables in skillet until they are hot. Add in spaghetti sauce,basil and chicken. Simmer over med. heat for about 10 min.
Serve over whole wheat pasta. Makes 6 1 cup servings.
