Introduction

This tasty side dish goes with almost any main course, and it's a great way to get extra veggies into your meal. This tasty side dish goes with almost any main course, and it's a great way to get extra veggies into your meal.
Number of Servings: 4

Ingredients

    * Tru Roots Organic Quinoa - dry, .5 cup
    *Chicken Broth - Low Sodium - Swanson, 1.5 cup
    * Carrots, raw, 1 cup, chopped
    * Zucchini, 1 cup, sliced
    * Mushrooms, fresh, 3 medium

Directions

Pour chicken broth into sauce pan and mix in Quinoa (after you've rinsed it). Add carrots, zucchini, and mushrooms. Bring to a boil. Slightly lower temperature and cook until most of the liquid has been absorbed (around 20 minutes). Serve hot. Sooo good, and sooo good for you!
