Healthier Meatloaf

Introduction

This meatloaf mixes turkey and ground beef for lower calorie count while still having a ground beef taste. This meatloaf mixes turkey and ground beef for lower calorie count while still having a ground beef taste.
Number of Servings: 8

Ingredients

    1 package 93% lean ground turkey (about 1 lb)
    1 package 93% lean ground beef (about 1 lb)
    1 small can V-8 vegetable juice
    2 eggs
    20 saltine crackers (or as many as necessary to make the meatloaf stick together)
    1 cup chopped raw onion (about 1/2 onion)
    1 tsp garlic powder (I don't really measure, just shake some in)
    salt and pepper to taste

Directions

In a large bowl, mix ground turkey and ground beef together. Add the egg, vegetable juice, garlic, salt, pepper, and onion and mix together (I use my hands). Crush crackers and add them to the mixture a few at a time until the meatloaf will hold together. Place in a loaf pan sprayed with Pam and cook at 375 degrees for about 1 hour. Makes about 8 servings.
