Introduction

Ground Turkey and Green Bell Peppers with tomato sauce over rice.
You could add tri colored peppers for a different flair, and substitute chopped tomatoes for sauce. I have even tried tomatoes with green chiles.
You could also experiment with the type of rice used. We just enjoy white.

Ingredients

    Ingredients:
    Tomato Sauce, 2 cup (remove)
    Green Peppers (bell peppers), 1 cup, chopped (remove)
    Garlic, 3 cloves (remove)
    Onions, raw, 1 cup, chopped (remove)
    Paprika, 2 tbsp (remove)
    Pepper, red or cayenne, 1 tbsp (remove)
    *Turkey, Ground turkey, 93% lean, 16 oz (remove)
    White Rice, long grain, 2.5 cup (remove)
    Sour Cream, reduced fat, 10 tbsp (remove)
    *Cheese, Kraft Mexican Style Taco Cheese, 1.5 cup (remove)


Directions

Brown the "beef" (ground turkey) in a large or I use an electric skillet.
Add Green peppers, onions, and garlic just before turkey is completely browned. Cook until crisp-tender.
Drain, return to pan.
In another pot, follow instructions to cook rice.
Add sauce, and spices and simmer for 15 minutes or until veggies are at desired texture.
Serve mixture over rice, garnish with sour cream, cheese and scallions, if desired. The calories, etc. can be almost cut in HALF without the garnishments.
