Quick Stir-Fried Vegetables

Introduction

Number of Servings: 4

Ingredients

    1/2 lb broccoli florets
    1 cup carrots, cut into strips
    2 cups mushrooms, sliced
    1 tbsp peanut oil
    2 cloves garlic, minced
    1 cup onion, chopped
    3 green onions, sliced
    2 tbsp low-sodium soy sauce

Directions

Wash and chop all veggies.
Heat oil in a wok or large fry pan. Add garlic and onion. Stir and cook 1 minute.
Add broccoli and carrots. Stir and cook about 5 minutes.
Add mushrooms and cook 2 minutes.
Add green onions and soy sauce, stir and cook about 1 minute. Serve immediately.
Serves 4.
