Muffin cup Spinach quiches by baybdoll

Introduction

Makes 12 muffin sized quiches Makes 12 muffin sized quiches
Number of Servings: 12

Ingredients

    1 C. egg beaters
    6 Lrg. egg whites
    4C fresh spinach
    3/4 C red onion chopped fine
    6 TBL fat free cream cheese
    3/4 C shredded jack or cheddar
    1 grn onion.
    Salt, pepper, garlic to taste
    dash nutmeg
    1/2 t olive oil

Directions

Chop spinach in processor with green onion.
Brown chopped red onion in olive oil. when you turn off the heat throw spinach mixture on top to wilt.
Put egg beaters, egg whites and cream cheese in processor to mix, add spices mix more.
Stir egg mix, cheese, and spinach to mix thoroughly. Ladle into cooking spray coated muffin pan. Cook at 375 for about 30 minutes.
If you like, top with diced tomato and more chopped green onion.
