Ingredients

1 pound "schnitzel" cut pork chops (very thin! - about 6 or 7 chops)
1/2 cup Kretschmer Wheat Germ
1/4 cup corn starch
1/2 tsp black pepper
1 tsp paprika
4 Tbsp Pompeian OliveExtra Plus Omega 3 DHA Oil
2 Tbsp chopped garlic
1 cup white onion, chopped
1 cup green bell pepper, chopped
1-1/2 cup sliced mushrooms
5 roma tomatoes, chopped
1 cup Swanson's 33% Less Sodium Chicken Broth
Directions
Mix wheat germ, about 1/4 tsp black pepper, 1/2 tsp paprika and 2 Tbsp corn starch on plate or shallow bowl. Coat chops with mixture.
In pan, heat 2 Tbsp. oil, then cook chops till light golden on each side. Remove chops from pan.
Heat 2 Tbsp oil in pan, then add onions, peppers, garlic and mushrooms. Cook until onions turn transluscent. Add tomatoes, cover and cook about 4 or 5 minutes until tomato begins to "fall apart" slightly. Sprinkle remaining corn starch over veggies, add 1 cup chicken broth, stir. Return chops to pan, covering with veggies and "gravy". Simmer about 15 minutes.
Serving size = 1 chop plus 1/2 cup veggies & gravy
Hubby serving size = 2-3 chops ...
*Note: I served this with brown rice.
