Walnut Rosemary Crusted Chicken

Introduction

I read that it would be good to add more healthy nuts to our diet, so I tried this. Inspired by Hannaford Markets "Fresh" magazine. I read that it would be good to add more healthy nuts to our diet, so I tried this. Inspired by Hannaford Markets "Fresh" magazine.
Number of Servings: 4

Ingredients

    3/4 cup finely chopped walnuts
    1/4 cup toasted wheat germ
    1/3 cup panko crumbs
    1 tbsp dried rosemary
    .25 tsp salt
    .25 tsp black pepper
    3 Tbsp Dijon mustard
    3 Tbsp mayonnaise
    1.5 lbs skinless boneless chicken breast, sliced to tenders

Directions

Mix mustard and mayonnaise together in a flat bowl or plate
Mix walnuts, wheat germ, panko, rosemary, salt, and pepper in another flat bowl or plate.

Lightly coat chicken with mustard mix. Dredge in walnut mixture.

Place on cooking-spray-coated wire rack and back at 425 degrees for 12 to 15 minutes.

It has been suggested these would benefit from a sweet mustard or ranch dipping sauce. We didn't use any and they were very good, but feel free!
