Veggie Fried Rice

Introduction

Works best with day old rice, or rice that has been pre-cooked and cooled in the fridge.
This "Fried Rice" is very low in fat!

Number of Servings: 8

Ingredients

    3 cups - cooked Brown Rice
    1 1/4 cup - frozen or canned Corn
    3/4 cup - Mushrooms, diced
    1 1/2 cups - Onion, finely chopped
    1/2 cup - Egg Substitute
    1 clove - Garlic, minced
    1 tsp - Olive Oil
    1 tsp - Sesame Oil
    3 tsp - Lite Soy Sauce

Directions

1) In a large pan, heat oil on medium-high heat. Add onion, garlic and rice. Stir and cook until onion is soft, about 5 minutes.

2) Reduce heat to medium and add corn and mushrooms to rice mixture. Cook 2 minutes.

3) Spread the mixture out to the sides of the pan, leaving space in the middle for the eggs.

4) Add the eggs, and scramble until cooked firm.

5) Mix the eggs with the rice and vegetables, then sprinkle with soy sauce.



1 serving = 3/4 cup
Makes 8 servings.
