Easy, quick mexican-style breakfast - great on cold mornings or for a late dinner - not too heavy.
Time is show as 29 minutes prep, 20 minutes cooking. This time overlaps since potatoes can be cooking while preparing egg mixture. so total time is about 30 minutes for everything.

Number of Servings: 4

Ingredients

    4 Large eggs
    1/3 Cup Non-fat milk or less
    1 Medium Russet Potato
    2 TBSP vegetable oil or Pam Spray
    Ketchup (optional, add to papas con nuevos after serving)

Directions

Peel and cube potato - small cubes so it will cook quickly.
Take 1 tblsp oil (or spray frying pan with Pam), heat pan over medium-low to medium heat. Stirring and turning over a bit more than occasionally. (approx. 10 mins or so)
Cook potatoes until tender but not browned or crisp - should still look white, but the cooked white of a potato not the raw white.
Set aside when cooked, Place on paper towel while waiting for eggs to be ready.
Mix eggs and milk together until pretty well mixed, doesn't have to be well mixed.
Take the other tblsp of oil (or more PAM spray), add to pan used for potatoes.
heat pan over medium-low to medium heat.
add eggs and start cooking for just a bit - you want more egg/milk mixture but a bit of cooked eggs - not a lot. (approximately 2-4 minutes)
Add potatoes
Continue cooking eggs and potatoes until eggs are cooked to your preference.
Serve.
Top papas con huevos with Ketchup - sounds strange but tastes good.
