Introduction

My favorite when I'm sick or need "comfort food" soup. Use just about any vegetable you have in the fridge and this will taste delicious. Number of Servings: 4

Ingredients

    4 cups various vegetables roughly chopped (broccoli, celery, onions, carrots, zucchini, cauliflower, lima beans, etc.)
    1.5 cups fat free chicken broth
    2 teaspoons salt
    1 teaspoon black pepper

Directions

Put all chopped vegetables in a large sauce pan. Cover with chicken broth and simmer on medium until very soft.

Carefully ladle vegetables and liquid into a blender and blend until smooth. Return to pan to reheat, season with salt and pepper to taste and serve.

    I'm glad it helped you. My mom would make it when I was a child and got sick and I just made it for myself last night because I'm sick and it did wonders for me.
