Whole Wheat, low gluten blueberry mini muffins

Introduction

No all purpose flour keeps these blueberry muffins lower in gluten. No all purpose flour keeps these blueberry muffins lower in gluten.
Number of Servings: 36

Ingredients

    1 c bob's red mill baking flour
    1 c whole wheat flour
    1/2 c sugar
    1 tsp cinnamon
    1 T baking powder
    1 tsp xantham gum
    2 eggs
    1/2 c butter
    1/2 c fat free milk
    1.5 c blueberries - fresh or unthawed frozen

Directions

Heat oven to 425. Butter or paper 36 mini muffin cups.
Combine dry ingredients & stir.
In separate bowl, toss 1 T of dry mix w/ blueberries, set aside.
Stir milk & eggs into melted butter.
Stir in dry ingredients. Don't beat.
Stir in berries.
Spoon into muffin cups.
Bake 12 mins until lightly browned.
