Potato and Leek soup

Ingredients

    Red Potato, 600 grams (5-6 small to medium, skin on)
    Leeks, 200 grams (1 large, white and light green parts only)
    Chicken Broth, 4 cup
    Milk, nonfat, 3 cup
    Water 1 cup
    Seasonings (I used pepper, garlic powder, garlic and more and thyme)

Directions

Thinly slice potatoes and leek and put them in the slow cooker with the water and broth. Put on high and cook until veggies are tender. Using a hand blender or blender, puree before adding milk and heating through.
