No Knead Whole Wheat Bread

Introduction

Baked in a cast iron dutch oven, this whole wheat loaf is hearty with a soft interior and crusty exterior, and requires absolutely no kneading. Started the day before, it provides impressive results, and grows stale in less than 2 days, so it isn't so tempting to have around long term. Ingredients

    2 C. white enriched bread flour
    1 C. whole wheat flour
    1/4 C rolled oats
    1/4 C. millet
    1/4 C. cornmeal
    1/4 C. flaxseed meal
    1/2 tsp. yeast
    2 tsp salt
    2 T sugar
    1 3/4 C water

Directions

Whisk dry ingredients together in a large bowl. Add water and stir until no dry spots remain. (Dough should look like sticky cookie dough.) Cover bowl with plastic wrap, and let rest at room temperature overnight or for about 20 hours.

Flour a clean work surface liberally. Using floured hands, roll dough in flour on all sides, folding over on itself a few times to form a round loaf. Place on parchment paper and cover with a tea towel, and let rise in a warm place for 2 more hours.

Preheat oven to 450 degrees. Preheat dutch oven with lid on in oven for 20 minutes. When dutch oven is hot, lift loaf parchment paper and all into hot, very hot pan and replace lid. Bake bread on middle rack for 40 minutes with lid on. Can then remove lid and bake another 5 minutes. Remove from oven, remove from pan, and let cool an hour for easier slicing.

Can substitute C whole wheat flour for any of the other C ingredients if out of them.

Serves 15 generously (about a 2 lb loaf)
