Number of Servings: 6

Ingredients

    2 c barely (dry)
    2 TBS olive oil
    1 large onion sliced
    3 cloves garlic finely chopped
    2 carrots grated
    2 celery stalks diced
    5 TBS soy sauce
    .25 tea sea salt
    .25 tea dried basil
    .25 tea oregano
    .25 tea garlic powder
    .75 c Tahini Dressing ( directions below)

    Tahini Dressing
    .25 small onion diced
    .5 c tahini
    1 TBS soy sauce
    pinch of garlic powder
    pinch of paprika
    .12 tea dried basil
    pinch of dried oregano

Directions

preheat oven to 350 degrees F
Bring 3 cups of water to boil with barley let coook for 45 to 60 min until tender

heat oil in pan and add onion and garlic, let saute for about 5 minutes.

add carrots, celery,soy sauce, slat basil, oregano, and garlic powder and cook for 5 min.

add the cooked barley and stir over medium heat for 3 min

put half of barley mixture in dish then add half of tahini dressing over top, add resent of barley mixture and then top with tahini dressing

cook in over for 35 min uncovered
