Introduction

Seared Cod with Sauteed vegetables Seared Cod with Sauteed vegetables
Number of Servings: 6

Ingredients

    2 lbs cod fillets cut into 2 pieces
    1/2 tbsp paprika
    1/2 cup olive oil
    1 med. diced carrot
    1 med. diced celery stalk
    2 leeks (white part) cut in thin rounds
    4 garlic cloves sliced thinly
    salt & pepper to taste
    pinch red pepper flakes
    5 oz baby spinach
    3 cups canned drained diced tomatoes

Directions

dust cod with paprika and sear on both sides in heated olive oil. set aside.
Add carrots, celery, and leeks, cooking until lightly colored over med/high heat.
Add garlic, salt, pepper, and red pepper flakes. Cook about 2 more minutes.
Add spinach and tomatoes, and cook over low heat for 6 minutes, stirring occassionally
Add the seared cod and cover, cooking about 7 minutes until cod is cooked.
