Number of Servings: 4

Ingredients

    3 chicken breasts. (1-1/2 whole breasts)- skinless and boneless
    1-28 oz or 2- 14 oz cans of cooked tomatoes
    1 medium sliced onion
    1/4 cup olive oil
    1/2 cup fresh parlsey, finely chopped
    1 tsp dried basil
    1 tsp salt
    1 tsp dried rosemary
    1 tsp dried oregano
    1 garlic clove, minced
    1 tsp black pepper
    1 tsp crushed red pepper
    1 cup sliced mushrooms

Directions

Brown the deboned skinless chicken breasts in the olive oil.

Remove the chicken and add onions. Cook until soft.
Add the remaining ingredients.
Cut the chicken into chunks and add back.

Simmer uncovered for 40-45 min.
