Chicken Merlot with Mushrooms

Chicken Merlot with Mushrooms


Slow cooking goodness. Slow cooking goodness.
Number of Servings: 5


    15 oz of boneless skinless chicken breast
    6 cups chopped mushrooms.
    1 large onion, chopped.
    5 cloves of garlic, diced.
    3/4 cup of chicken broth
    1 ~ 6oz can of tomato paste.
    6 oz of red wine.
    2 tbsp. quick-cooking tapioca
    2 tbsp. fresh basil, diced
    2 tps. salt
    2 tps. black pepper


In a 4-5 quart slow-cooker place mushrooms, onion, garlic. Top with the chicken pieces.
Combine the rest of the ingredients in a bowl and pour over chicken.

Cook on low setting 5 hours...or on high for 3 hours.

Typically this is served over rice, noodles, whatever your fancy is.

  • This recipe is excellent. For having such a simple ingredient list, the flavor is fantastic. I figured that it was probably the WINE! Definitely would recommend this recipe. It's even better the next day as leftovers. - 10/19/10
