IntroductionForget the noodles...here's a lasagna that's just as good. Forget the noodles...here's a lasagna that's just as good.
1 Medium Spaghetti Squash
2 Medium Zucchini, shredded or sliced
1 Jar of Spaghetti Sauce (sugar free if possible, or you can make your own.)
1 C grated carrots
2 C shredded Mozzarella Cheese (low fat if possible)
1 Can sliced black olives
1 LB Ground Turkey
Preheat the oven to 350 degrees.
Cut the squash in half long ways and place it in a casserole dish upside down. Fill the casserole dish with about an inch of water. This will make the squash more moist.
Next brown the meat and drain any excess grease.
Heat the spaghetti sauce or create your own, let it simmer with the carrots and the rest of the veggies so that the get slightly soft. Add the meat, and simmer until the squash is ready.
Once the squash is ready, let it cool for a few minutes, and then scrape out the seeds. Next scrape the squash down to the rind and put it in a bowl.
