Mock Cinnamon Rolls (Biscuit type bread)

Number of Servings: 12

Ingredients

    1 1/2 C all purpose flour
    1 1/2 C whole wheat flour
    6 tsp baking powder
    1 tsp brown sugar, packed
    1 tsp salt
    2 1/4 C flax seed meal
    1 egg + 1 egg white, beaten
    1 1/2 C nonfat milk
    3 tbsp Smart Balance buttery spread
    3/4 C brown sugar, packed
    2 tbsp cinnamon, ground

Directions

Combine dry ingredients in a large mixing bowl. Stir thoroughly. Add egg and milk; mix until dough holds together well (add a tsp of milk at a time if needed). Turn dough onto floured board and knead lightly . Roll dough into a large rectangle about 1/2" thick. Spread Smart Balance buttery spread over dough; sprinkle with brown sugar and cinnamon. Roll dough pinwheel style, starting with long edge of dough. Pinch seam to seal the roll of dough. Cut into 12 equal portions and place evenly spaced in an ungreased 9x13 non-stick baking pan. Bake at 400 degrees F for 15-20 minutes or until done. Serve warm. Makes 12 rolls.
