Baked Beef Stew

Ingredients

    2 lb. beef round cubes
    2 Tbsp all-purpose flour
    3 stalks celery
    1/4 cup olive oil
    1 1/2 cup sliced onions
    3/4 lb carrots, peeled and sliced
    4 tsp. Worcestershire sauce
    2 bay leaves
    2 sprigs fresh thyme
    2 cups beef broth
    salt and pepper to taste

Directions

1. Preheat oven to 325 degrees F. In a large bowl or bag, toss the beef in the flour until evenly coated. Trim and slice the celery and set aside.

2. Heat the olive oil in a large skillet. Add onions and saute for 5 minutes. Remove with a slotted spoon and set aside. Saute the beef, in batches if necesary, until browned.

3. Add teh celery, carrots, worcestershire sauce, bay leaves and thyme to the skillet. Saute for 4 minutes. Trnasfer to a large ovenproof casserole dish. Add the broth, salt and pepper.

4. Cover the casserole dish and bake for 1 hour 15 minutes. Add the onions and bake until the sauce thickens and vegetables are tender, about 45 minutes longer. Serve warm.
