This is an easy low sodium soup. I love making my own broths, they are so simple and taste sooooo much better! This is an easy low sodium soup. I love making my own broths, they are so simple and taste sooooo much better!Number of Servings: 6
Ingredients

Celery, raw, 8 stalk, large (11"-12" long) diced
Onions, raw, 1 large diced
Chicken Breast, no skin, 20 ounces
Kosher Salt, 2 tsp
Baby Carrots, raw, 20 medium halved
Green Peppers (bell peppers), 1.5 cup, chopped diced
Jalapeno Peppers, 1 pepper diced
Brown Rice, long grain, .5 cup
10 cups water
Directions
1. Place chicken breasts in a large pot with 10 cups water, salt, 3 stalks of celery chopped, and half an onion chopped.
2. Cook for about 2 hours on medium-high heat. Enjoy that smell... :P
3. Strain broth Keep broth and Chicken, discard extra onion and celery. (way too squishy to add back.)
4. Dice chicken and add all other veggies and rice to the mix. Add broth and cook for another 30 minutes or until you are ready on medium-low heat. Season with whatever herbs you like, although the veggies give a great flavor to this.
5. Enjoy! This is a wonderful soup for the winter or when you are sick.
