Introduction

This is a recipe that I tweak as needed and have made it with whole wheat flour. The family likes it this way with 1/3 cup pecans stirred into the batter. Number of Servings: 7

Ingredients

    Beat: 2 egg whites until stiff

    Mix together:
    2 egg yolks
    2 cups milk
    1 T. sugar
    1 tsp salt
    2 T. canola oil

    Add and stir until incorporated (do not over beat or stir your waffles [or pancakes] will get tough):
    1 1/3 cups white flour
    1/4 cup wheat germ, crude
    1 T. flax meal
    1 T. baking powder
    1/2 tsp. baking soda

    Fold in the egg whites gently

    Cook in waffle iron.

Directions

One waffle is one serving.
