Super Duper Zuppa

Introduction

Ingredients

    8 links of your favorite Italian Sausage. (I like Fennel sausage)
    6 cups of Pacific Organic Free Range Chicken broth
    1 large onion chopped
    6 slices of lean bacon lightly browned and drained
    2 cloves of garlic minced
    4 cups of Kale center rib removed, washed and chopped
    2 cups of tap water
    1 cup of Half & Half
    2 large Russet Potatoes well washed with skin on & chopped
    2 tsp salt (or to your taste)
    1 tsp pepper (or to your taste)
    1/2 tsp crushed red pepper flakes (or to your taste)

Directions

In a large stock pot saute bacon, onion and garlic over medium heat until the onions are soft. (about 15 minutes) Add chicken broth, water, salt, pepper and sliced potatoes. Cook at medium to low heat. While this is cooking saute the sausage with the crushed red pepper, drain off excess fat and add to the stock pot along with the chopped Kale. Continue to cook the entire mixture until the potatoes are soft. Stir in the Half & Half and heat and serve.
