Southwest Black Bean Quesadilla

Ingredients

    1 spinach tortilla
    1.5 oz cabot reduced fat pepperjack cheese- shredded or chopped
    1/4 c. frozen southwest corn
    1/4 c. black beans drained and rinsed
    1 tbls chopped onion
    1/2 tsp taco seasoning

Directions

Preheat a George Foreman or similar grill.

In a bowl mix the beans, southwest corn, onions, cheese and taco seasoning.

Put the mixture onto one side of the tortilla then fold over.

Place the folded and filled tortilla on the grill and close. Let it cook for 5 minutes until cheese is melted and everything is warmed through.

*Feel free to add other veggies. I made my own taco seasoning with extra chili powder to add some extra heat.
