Introduction

Modified from the book Secrets of Fat-Free Baking.

I used Total Whole Grain Cereal and used different dried fruits, decreased the amount of sugar, and for the next version I will add applesauce (included below). The recipe from the book didn't have applesauce and was a dry.

Number of Servings: 12

Ingredients

    Ingredients:
    * 2-1/4 cups Total Whole Grain Cereal
    * 1-1/3 cup Skim Milk
    * 1 large Egg
    * 1 tsp Vanilla Extract
    * 1 cup Applesauce, unsweetened

    Soak the cereal in the above ingredients for 10 minutes, before mixing with rest.
    * 1-1/2 Cup Whole Wheat Flour
    * 3/8 Cup Granulated Sugar
    * 1 Tbsp Baking Powder
    * 1/4 tsp Cinnamon, ground
    * 1/3 Cup Cranberries, dried, sweetened (craisins)
    * 1/8 Cup Dried Goji Berries
    * 1/4 Cup Sunflower Seeds, hulled, without salt

Directions

Makes 12 muffins
