IntroductionMakes 12 cups or 8 servings. Makes 12 cups or 8 servings.
8 cups low sodium chicken stock
2 cups tap water
2 tbsp. olive oil
2 cups raw, sliced carrots
1 cup chopped raw onions
1 cup chopped raw celery
1 cup chopped sweet red peppers
4 boneless, skinless chicken thighs, chopped
1 cup Uncle Ben's parboiled Wholegrain Brown Rice, raw
1/2 tsp. Amer. Heart Assoc. Herb Seasoning
Add the chicken stock, the rest of the veggies and the chicken.
Simmer for 40 minutes.
Add the rice and the water and cook for another 40 minutes.
