Roasted tomato penne pasta

Introduction

Not low fat, but healthy and delicious! Not low fat, but healthy and delicious!
Number of Servings: 8

Ingredients

    1 pint of grape or cherry tomatoes
    3/4 c olive oil
    5-6 large cloves of garlic
    1 box of pasta, penne or whatever shape you like (bowtie would do nicely)
    Salt and pepper to taste
    Dried Italian seasoning, if desired

Directions

Cut the tomatoes in half and place cut side up on a baking pan. Put the garlic cloves in their paper on the pan as well. Drizzle with olive oil and add salt and pepper. Roast at 225* for 2-3 hours or until done, they should look like sun dried tomatoes.

Heat the olive oil in a large skillet on low heat. Remove the garlic from their skins and mash with salt, pepper, and herbs if desired, and add to oil.

Put the water on to boil and cook pasta to al dente.

Add the pasta to the pan and toss to coat. Add the tomatoes and any oil from the pan that may be left over.

Sprinkle with parmesan if desired (not included in nutrition).

Serve with chicken and salad.

Serves 6-8 people.

  • I tried a variation on this recipe. I added olive oil, chives and butter beans. I got it from the food network. It wasn't that great and I didn't think the beans went very well. Healthy tasting, wholewheat pasta. - 9/5/10
