4 fillets, 1lb tilapia 2 tsps olive oil black pepper 1/4 cup parmesan cheese 1 tbsp dried basil
Cut each fillet in half lengthwise. Preheat broiler. Heat 12 inch ovenproof skillet with olive oil over moderate high heat. Pat fillets dry and season with pepper. Mix cheese & basil in small bowl and set aside. In skillet cook fish 3 minutes or until brown. Flip fish over and remove skillet from heat. evenly cover fish with cheese mixture and broil for 3-4 minutes or until cheese is slightly brown and fish is fully cooked.
