Orange Orange Roughy

Introduction

Healthy, tasty and quick, this recipe has become a standby for us, both for entertaining and for everyday eating. Any white fish will work, but orange roughy just seems right for an orange juice based sauce! Any white fish will work, but orange roughy just seems right for an orange juice based sauce!
Number of Servings: 2

Ingredients

    2 - aprx 6 ounce fillets of orange Roughy or other white fish
    Juice of 2 oranges or 1 cup orange juice (approximate)
    aprx 1 tbsp flour
    2 tsp nutmeg
    zest of 1 orange
    1 tbsp olive oil (or nonstick cooking spray)

Directions

Make sure fish is fully thawed. Dry fish by pressing between paper towels. on a plate or shallow bowl, mix together flour and 1 tsp of nutmeg, and spread thin. Coat fish fillets in the flour mixture on both sides.

In a bowl or cup, mix together orange juice, remaining nutmeg, and orange zest.

Heat oil in a fry pan on medium or medium high. Place in filets, and cook aprx 5 mins on each side (or until cooked thru). In last minute of cooking, pour orange juice mixture over fish and let it come to a boil. Remove fish, and let orange juice boil until desired sauce consistency (usually it doesn't need more than a minute) Pour sauce over fish and serve immediately.

Makes 2 servings, and increases easily for more people. orange juice amount is approximate! I almost never measure it.
