2 1/2 cups whote wheat flour 1 Tbsp baking powder 1/4 tsp salt 2 1/2 cups skim milk 1 Tbsp distilled vinegar 1 large egg, beaten 1 Tbsp vegetable or canola oil 1/4 cup maple syrup
Mix milk and vinegar together, Let stand five minutes. In large mixing bowl, stir flour, baking powder, and salt together. In separate mixing bowl, mix milk, egg, oil, and syrup together. Add wet ingredients to dry ingredients all at once and stir until moistened (batter should still be lumpy). Pour 1/4 cup batter onto hot griddle and cook about three minutes on first side. Flip over and cook two minutes. Serve with additional maple syrup or fruit topping.
