Seven Layer Casserole

Introduction

Number of Servings: 6

Ingredients

    1 cup uncooked rice
    1 can (340 ml) whole kernel corn
    1/2 tsp pepper
    1 tsp salt
    1 can tomato soup, diluted with 3/4 can water
    1/2 cup finely chopped onion
    1 lb lean ground beef, uncooked
    1/2 tsp pepper
    1/2 tsp salt
    bacon strips 8 -10

Directions

Mix tomato soup with water and set aside.

Spray 9x13 pan very well with no stick spray.

Pre-heat oven to 350 F

Layer ingredients evenly in pan in following order:
rice, corn and it's liquid, 1 tsp salt, 1/2 tsp pepper, 1/2 of the tomato soup mixture, onion, ground beef, 1/2 tsp salt, 1/2 tsp pepper, the remainder of the tomato soup mixture.

Cover the top with evenly with bacon strips. They will shrink a lot so be generous.

Cover the pan with aluminum foil - make sure it is sealed well around the edges.

Bake at 350 F for 1 hour. Remove the tin foil and continue baking for 30 minutes.

Makes 6 servings.
