Introduction

Ingredients

    1/2 onion diced
    265 g carrots shredded
    2 cloves garlic, diced
    1 bunch cilantro chopped and rinsed
    8 oz mushrooms, sliced
    1 bell pepper diced
    2 cups dry lentils
    5c water
    2 tbs curry powder
    1 tbs oregano
    salt and pepper
    2 tbs olive oil

Directions

in a large sauce pan add oil,
saute everything but lentils ,spices, and water for about 5 min
add lentils water and spices
bring to boil, reduced heat, cover and simmer 30 min
makes 8 (1 cup) serving
