Chicken & Rice Foil Pack

Introduction

This is a dinner wrapped in foil to bake. It started as a Kraft recipe but we've adopted some changes and it no longer follows the same recipe as the Kraft site shows. We applied the Hobo-pie style cooking to this meal. You put whatever you want to taste in the foil, cook it all together, and there is the entire plate.

Calculate how much you need by how many people are eating. Each foil wrap usually makes plenty, or too much. We like to make this at night and eat the left-overs for lunch the next day. You might only want 1 foil wrap for 2 people, or cut the amount in half per foil wrap if you don't want left overs.

Ingredients

    Foil
    Pam
    Chicken Breast- 1 per person
    Minute Rice- 1 Cup per person
    Ranch- 1 tbs per person
    Mixed Veggies- Frozen
    Shredded Cheese- 1/2 cup per person

Directions

Make for 4 people:
Soak 4 cups of minute rice in 4 cups of water while prep.
Lay out 4 foil sheets about a foot to a foot and a half long.
Spray foil with Pam or another non-stick spray. Apply liberally to entire sheet.
Scoop about 1 cup of rice for each sheet of foil and place each cup on each of the foil sheets.
Cut up Chicken into thin slices or smaller chunks- this quickens cook time. The smaller the pieces the less it will take so cook time may vary.
Place 1 uncooked chicken breast on each cup of rice on foil.
Put half cup of frozen mixed veggies on each one.
Add about a half a cup of shredded cheese (to taste, some don't like as much, some like more)
Add about a tablespoon of ranch
top with spices of your choice. We stick with Italian seasonings, garlic and crushed red peppers for spice.
Fold to create tight packets
Bake for 30-40 min or until chicken is cooked.
Unwrap and enjoy!
