Phyllo Papa Pot Pie

Introduction

Ingredients

    1 chicken breast, poached in stock
    1/2 bag of frozen vegetables for stew, w/ added peas
    1 cup low or no sodium chicken stock
    1 T. white flour
    1 T. oil
    Seasonings to taste
    1 4x6 cut sheet of phyllo or puff pastry roll (several layers)
    1 T. Papa John's garlic sauce (from pizza box!)

Directions

Begin by poaching the chicken breast in the stock. Place breast in stock, then add a few seasonings like garlic, peppercorns or bay leaf in you like. Let rise to a boil, then turn heat down to simmer for 10 minutes. Remove and let cool.

Place frozen vegetable into stock and rise to boil. Turn heat down to simmer until just cooked. Strain and reserve stock and put aside vegetables.

Whisk oil and flour in stock pan. When browned, slowly add stock. Which until thickened. Cool slightly.

Cut breast into bite size chunks, combine with vegetables and stock mixture.

Place in oven proof ramekin or small casserole. Layer puff pastry over, basting the top with the Papa John's garlic sauce. Cut a small vent in the top.

Bake at 350 for 20 minutes or until pastry is brown and sauce is bubbling.
