1 1/2 cup cooked green lentils (or other type)
1/2 a small red onion, diced
1 cup carrot - cut into strips
1 clove garlic, minced
about 4 T minced fresh parsley
half a red pepper, diced
2 T Light EVOO
2T Lemon juice
1 T tahini (sesame seed paste - sub a little sesame oil if this isn't available)
dash of salt, pepper and cumin
Serve on a bed of spinach with some pita, tomato slices, cucumber slices, hummus and falafel for a complete meal. Great for entertaining.
