Chicken Marabella

Ingredients

    8 boneless and skinless Chicken Breasts
    4 cloves crushed Garlic
    2 tsp, ground Oregano
    1/2 C, Red Wine Vinegar
    1/2 C Olive Oil
    1/2 C, dried and pitted Prunes
    3/4 C, dried Apricots
    3/4 C, green olives, pitted
    1/2 C, Capers
    4 Bay Leaves
    1/2 C, Brown Sugar, packed
    1/2 C, White Wine
    4 C, White Rice

Directions

Combine ALL ingredients (except brown sugar and white wine) and marinate for 24 hours.

Preheat oven to 365F.
In shallow baking dish, place chicken in single layer with marinade. Sprinkle brown sugar and pour white wine in the mixture.
Cook about 1 to 1 1/2 hours or until chicken is fully cooked.
Let stand 5 minutes before serving.
Serve over white rice.
