Potato Salad



Introduction

Number of Servings: 20

Ingredients

    10 medium potatoes
    2 C Fat Free Mayo
    1/2 large onion
    3 hard boiled eggs
    Salt, Dill and Cayenne to taste

    1/3 C Mustard if you like a mustard potato salad. Mustard not included in calculations.

Directions

Peel/Chop potatoes to desired size, place in pot and bring to boil. Once boiling cook 15 minutes. Drain and cool.

Place eggs in pot, cover with water, bring to boil, boil for 10 minutes. Turn off heat and let sit for 20 minutes. Remove eggs from water and chill.

Chop onion to desired size.

When eggs have cooled, peel them.

Add all ingredients to potatoes.

Mix well.
