Spicy Chicken Thighs

Introduction

Very quick meal to prepare for a crowd. Serve with vegetables or a salad.
I buy the unboned thighs, bone them as soon as I get home and freeze for later use. Unboned thighs are a lot cheaper.

Number of Servings: 4

Ingredients

    Chicken Thigh, 8 thigh, bone and skin removed
    Curry powder, 2 tsp
    Pepper, red or cayenne, .5 tsp
    Paprika, 1 tsp
    Garlic, 4 cloves
    Soy Sauce, 2 tbsp
    Ginger Root, 3 tsp
    Balsamic Vinegar, 1 tbsp (any vinegar will do)
    Soybean Oil, 2 tbsp (any oil will do)
    Honey, 1 tbsp ( apricot jam works well too)


Directions

This serves four people, two thighs each.
Mix all ingredients stir well to combine then pour over chicken.
Bake in oven at 180 celsius (350 farenheit) for 45 to 60 minutes denending on oven.
I like serving mine with steamed vegetables or Greek salad.
