Pork Stroganoff

Introduction

Number of Servings: 4

Ingredients

    pork tenderloin, 12 oz
    1 tbsp vegetable oil
    1 medium onion, chopped
    2 garlic cloves, crushed
    1 oz flour
    2 tbsp tomato paste
    1 3/4 c vegetable broth
    5 oz mushrooms, sliced
    1/2 tsp nutmeg
    4 tbsp low fat plain yogart, plus extra to qarnish
    salt and pepper to taste
    Fresh parsley, chopped for garnish

Directions

Trim tenderloin of fat and silver skin, and cut in 1/2 inch medallions.
Heat oil in large skillet and fry the pork, onion and garlic 4-5 minutes until lightly browned.
Stir in the flour and tomato paste, pour in the vegetable stock and mix thoroughly.
Add the mushrooms, salt, pepper and nutmeg.
Bring to a boil, cover and simmer 20 minutes until pork tender and cooked.
Remove skillet from heat and stir in yogart to mix thoroughly.
Serve on bed of rice, spoon dollup of yogart on top and garnish with parsley.
