Introduction

This is tasty enough for the whole family and still SCD legal. This is tasty enough for the whole family and still SCD legal.
Number of Servings: 8

Ingredients

    1 tbsp olive oil
    1 red bell pepper
    1 chopped onion
    3 cloves garlic
    1 lb chicken breast, cut into bite-size pieces
    2 tbsp chili powder
    1 tsp ground cumin
    1 tsp ground coriander
    1 can green chili peppers
    1 lb dry black beans, soaked 12 hours, then cooked, rinsed, and drained
    1.5 cups tomatoes, chopped
    Salt and pepper to taste

Directions

Heat olive oil in a large stock pot. Add pepper, onion, and garlic. Cook, stirring, until tender. Add chicken and spices. Cook until chicken is done. Add beans and tomatoes and salt and pepper to taste. Cook until heated through.
I often put this into a crock pot at this point to hold until dinner time.
Makes about 8 1-cup servings.
