Mom's Warm Lentil Salad

Introduction

Cooked lentils mixed with veggies and cilantro. Cilantro makes the dish so use whatever veggies you want. Cooked lentils mixed with veggies and cilantro. Cilantro makes the dish so use whatever veggies you want.
Number of Servings: 3

Ingredients

    1 cup uncooked lentils
    3 cups water
    1 tbsp olive oil
    1/2 cup onion, chopped
    2 cups green bell pepper, chopped
    1/4 cup cilantro, chopped
    1/2 tsp salt

Directions

Cook lentils in water until tender. Drain cooked lentils into a holding bowl. Heat oil in pan used to cook lentils. Add onion and sautee for 3 minutes add bell pepper and cook for another 5 minutes.

Add lentils and salt and stir. Add cilantro and heat through then turn off and enjoy.

Makes 3 - 1 cups servings
