fiesta chicken

Submitted by: MJWILBANKS

Introduction

Found this one years ago in a healthy magazine. 10 years later it is still one of our favorites and my college son now cooks it for him and his buddies. We take the leftovers and use it in a tortilla the next day for lunch with sour cream and cheese. This recipe is really good. Used white rice and chicken thighs and half the spices except for the garlic and daughter even raved. Daughters been begging me for healthier meals. This is the first time she actually liked what she was eating! - 4/22/10

  • I served this over brown rice and topped it with just a bit of grated cheddar cheese and fresh avocado. The spice blend was great even though I did not have cilantro it was very good without it. I will add this one to my list of favorites. Very quick to cook with flash frozen chicken breast! - 3/9/11

  • This recipe was simple and great! I used low sodium black beans, and low sodium diced tomatoes with green chilies. So we were able to cut the sodium down a little bit more. We also served it over yellow rice. I just finished eating some leftovers for lunch!!! - 2/21/09
