Low Fat Zuppa Toscana

Introduction

Like Olive Garden's soup, only a delicious low fat version Like Olive Garden's soup, only a delicious low fat version
Number of Servings: 10

Ingredients

    1 lb low fat Italian Turkey Sausage (hot if desired)
    2 cups chopped onions (or 2 large ones)
    6 garlic cloves minced
    16 oz chopped raw potatoes (Skin on if desired)
    3 slices of pre cooked diced bacon (fat removed)
    3 chicken boullion cubes
    4 cups chopped fresh kale (remove spines)
    2 cups nonfat dry milk powder

Directions

Saute the Turkey Sausage, then add the onions and garlic and cook til tender. Add boullion cubes and 12 cups of water. Bring to a boil and add the potatoes and bacon. Let simmer until potatoes are tender. Then add the dry milk powder mixed in with two cups of lukewarm water to the pot. About 15 minutes before serving add the kale.
Makes about 10 hearty servings.
