Stuffed Baked Potatoe

Introduction

You can't eat these everyday, but for a special treat - try these scaled down baked potatoes! You can't eat these everyday, but for a special treat - try these scaled down baked potatoes!
Number of Servings: 4

Ingredients

    4 small russet potatoes
    4 tbsp fresh chives, chopped
    4 slices cooked morning star bacon strips
    2 tbsp Fat Free Sour Cream
    1 cup chopped broccoli

Directions

1. Preheat oven to 350 F

2. Wash russet potatoes

3. Microwave potatoes for 3 minutes

4. Wrap potatoes in foil and bake for 30 minutes

5. Chop chives, broccoli and bacon (put aside)

6. Add toppings when potatoes are done - enjoy and remember to eat the skin for added fiber!
